Tasting notes: Fermentation in wood takes Vernaccia back to the winemaking traditions of San Gimignano's ancestors, the Etruscans and the Knights Templar. From the Templars' techniques, it takes on the Burgundy style: a cheese wine, with a full body and a lingering aftertaste. 12 months in barriques, and 24 months in bottle, it'd a good idea to lay a few of these down for a while.
